Chicken Galantine

Nichols chicken completely deboned and rolled around a stuffing of couscous, almond and lemon, or Mediterranean style forcemeat containing olives, artichokes and sundried tomatoes.

Cooking time:

1 hour 30 minutes

Instructions:

Pre-heat oven to 180°C. Baste chicken with a little melted butter and cook for 1½ hours.

Rest chicken for at least 20 minutes before removing net and carving.
