Eye Fillet of Beef
Prime Tasmanian beef, completely denuded ready for the pan.
Cooking times:
20 to 30 minutes, depending on size, plus searing time.
Instructions:
Heat a little oil in a heavy-based frying pan. Rub sea-salt, ground black pepper and oil into beef fillet and sear on each side.
Preheat oven to 220°C.
Place meat in ovenproof dish. Place in oven and reduce temperature to 180°C.
Cook for 20 to 30 minutes depending on thickness and degree of rareness required.
Remove from oven and rest for 15 minutes.
