Spatchcock
Free range local spatchcocks can be roasted as a whole unit, stuffed or unstuffed. Can also be butterflied and barbecued.
Cooking times:
Baked: 45 minutes
Barbecued: 15 minutes on each side
Instructions:
Pre-heat oven to 180°C. Place whole bird (stuffed or unstuffed) into baking dish. Bake uncovered for 45 minutes.
If barbecuing or grilling butterflied bird, allow 15 minutes each side with medium heat. When cooking last side, cover if possible with large lid or casserole to prevent drying out.
