Squab

Can be roasted quickly or slow-cooked as a braise for up to 2 hours

Cooking time:

Roasted: 30 minutes

Braised: 1½ to 2 hours

Instructions:

Preheat oven to 220°C.

Cover birds with pork fat and roast for 30 minutes.

Remove and let rest for another 30 minutes.
