Osso Buco

Prime veal shin, cut into individual portions.

2 hours

Instructions:

Coat veal in seasoned flour and brown on all sides in a pan. Remove to casserole and add carrots, celery, onions, lemon peel and garlic. Cover with stock and red wine and simmer gently for 2 hours.

Adjust seasonings and add some tomato paste if required.

Serve with Milanese risotto sprinkled with gremolata.
