Veal Rack

Prime cut of veal, can be roasted as a whole or cut into cutlets and pan-fried as a steak. The preferred cooking method is to braise for a couple of hours.

Cooking time:

Hot and fast: 30 minutes, rest for 30 minutes

Braise: 2 hours

Instructions:

To braise: Brown meat and place on top of onions, carrots, celery, etc. Cover with stock and white wine and cook at 150°C for 2 hours, covered.

After cooking, reduce stock, and add some cooked honey brown mushrooms and some cream.

Cut meat into cutlets and serve with a creamy mash or some noodles.
