Venison Roast
Forequarter of venison marinated in red wine, juniper, garlic, bay leaves and peppercorns.
Cooking time:
2 hours.
Instructions:
Pre-heat oven to 160°C. Place venison with marinade in ovenproof dish with lid. Bake, basting regularly throughout cooking time. Test with skewer after 90 minutes.
Let stand for 15 minutes before removing netting. Make sauce with marinade if required.
Can be cooked successfully in Weber in foil covered dish.
